HALLOUMI CHEESE ADVENTURE
Last night, feeling my mediterranean roots, I decided to fry up some Halloumi cheese at home. I had only had only had it once before, but once was enough to incite a random weekday craving. Kinda difficult to find (you might have to venture out to the ethnic grocery for this one), but terribly easy to put together — just slice the cheese, dredge it in flour, and fry it in a a skillet with about 2 Tbsp of olive oil. By some miracle of nature, it won’t melt, but just becomes pleasingly soft with a nice, crunchy crust. The taste is somewhere between Feta and Mozzarella, and served with crusty bread and a drizzle of honey, it’s to die for.
